Avocado Sandwich

Ingredients
  

  • 2 slices whole grain bread (or sourdough for extra tang)
  • 1 large ripe avocado
  • 1 tablespoon fresh lemon juice
  • 2-3 cherry tomatoes, sliced
  • 2 slices cucumber
  • 2 tablespoons red onion, thinly sliced
  • Salt and pepper to taste
  • 2-3 leaves fresh lettuce or spinach
  • 2 slices turkey or ham (optional)

Method
 

  1. Place bread slices in the toaster or toaster oven until golden brown and crispy.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a medium bowl. Mash with a fork until mostly smooth, leaving a few small chunks for texture.
  3. Add lemon juice, salt, and pepper to the mashed avocado. Mix gently until well combined. Taste and adjust seasoning as needed.
  4. Spread the seasoned avocado mixture evenly on both pieces of toasted bread. Layer one slice with lettuce, tomato slices, cucumber, and red onion. If adding protein, place it between the vegetables and avocado.
  5. Top with the second piece of bread, avocado-side down. Press gently to help everything stay together, then cut diagonally with a sharp knife.

Notes

Choose avocados that yield slightly to pressure but aren't mushy. Use lemon juice to prevent browning. Toast bread to prevent sogginess. Assembled sandwiches are best eaten immediately. Store leftover avocado mixture covered tightly with plastic wrap pressed directly onto surface for up to one day.
