Brown Sugar Banana Bread

Ingredients
  

  • 3 very ripe bananas, mashed (about 1½ cups)
  • ¾ cup packed light or dark brown sugar
  • cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ cup sour cream or plain Greek yogurt

Method
 

Preheat and Prep Your Pan
  1. Preheat your oven to 350°F (175°C). Grease a standard 9x5-inch loaf pan with butter or nonstick spray, then lightly dust with flour. Set the pan aside while you mix everything together.
Mash the Bananas
  1. In a large mixing bowl, mash your ripe bananas with a fork until mostly smooth. A few small lumps are fine — they add lovely texture. The riper the bananas, the sweeter and more flavorful the bread will be.
Mix the Wet Ingredients
  1. Stir the melted butter into the mashed bananas until combined. Add the brown sugar and mix well until the mixture darkens into a rich, caramel-scented batter. Add the eggs one at a time, then stir in the vanilla extract and sour cream.
Add the Dry Ingredients
  1. Sprinkle the flour, baking soda, salt, and cinnamon directly over the wet mixture. Using a spatula or wooden spoon, fold everything together gently until just combined. Stop mixing the moment you no longer see dry streaks of flour — do not overmix.
Bake to Golden Perfection
  1. Pour the batter into your prepared loaf pan and smooth the top. Place on the center rack of the preheated oven and bake for 55–60 minutes. After about 50 minutes, insert a toothpick into the center — it should come out clean or with just a few moist crumbs. The top should be deep golden brown and slightly domed.
  2. Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

Use deeply speckled or almost fully brown bananas for the best flavor and sweetness. You can speed-ripen unpeeled bananas in a 300°F oven for 15 minutes. Avoid overmixing the batter to prevent a dense, rubbery texture. Don't open the oven before the 45-minute mark. If the top browns too fast, tent loosely with foil after 40 minutes. Optional mix-ins: ½ cup chocolate chips, chopped walnuts, or a swirl of peanut butter. Busy tip: Mix wet ingredients the night before and refrigerate. Storage: wrap tightly and store at room temperature up to 3 days, refrigerate up to 1 week, or freeze individual slices up to 3 months. Reheat frozen slices in a toaster oven at 325°F for 5 minutes.
