- Fold in chopped cranberries, half the pecans, honey, fresh thyme, and black pepper. Mix gently until evenly distributed throughout the cheese base.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the mixture.
- Using clean hands or a small scoop, form the mixture into 12-15 walnut-sized balls. Roll each ball in the remaining chopped pecans, pressing gently so the nuts adhere well. Place finished cheese balls on a serving platter.
