  • 8 oz goat cheese, softened
  • 4 oz cream cheese, softened
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pecans, finely chopped
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon black pepper
  • Additional chopped pecans for rolling

  1. In a medium bowl, combine softened goat cheese and cream cheese using a fork or wooden spoon. Mix until completely smooth and no lumps remain. If too firm, let sit at room temperature for another 10 minutes.
  2. Fold in chopped cranberries, half the pecans, honey, fresh thyme, and black pepper. Mix gently until evenly distributed throughout the cheese base.
  3. Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the mixture.
  4. Using clean hands or a small scoop, form the mixture into 12-15 walnut-sized balls. Roll each ball in the remaining chopped pecans, pressing gently so the nuts adhere well. Place finished cheese balls on a serving platter.

Notes

Can be made up to 2 days ahead and stored covered in refrigerator. Flavors improve as they meld together. Bring to room temperature for 15 minutes before serving for best texture. Don't skip chilling step as it's crucial for shaping. Store covered in refrigerator for up to 4 days. Don't freeze due to texture changes.
