Crock Pot Chicken

Ingredients
  

  • 2 lbs bone-in chicken thighs (or chicken breasts)
  • 1 packet onion soup mix
  • 1 can cream of mushroom soup (10.75 oz)
  • 1 cup chicken broth
  • 2 medium carrots, sliced
  • 3 medium potatoes, cubed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Layer diced onion, sliced carrots, and cubed potatoes in the bottom of your slow cooker.
  2. Pat chicken pieces dry and season generously with salt, pepper, and thyme. Optional: sear in a hot skillet for golden-brown color.
  3. In a mixing bowl, whisk together cream of mushroom soup, chicken broth, onion soup mix, and minced garlic until smooth.
  4. Place seasoned chicken pieces over the vegetables in slow cooker. Pour sauce mixture evenly over everything.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken easily shreds with a fork and reaches 165°F internal temperature.

Notes

Don't lift the lid frequently during cooking as it releases steam and extends cooking time. Avoid adding dairy products too early as they can curdle. Cut vegetables uniformly for even cooking. Optional searing of chicken adds extra flavor depth. Store leftovers in refrigerator for up to 4 days or freeze for up to 3 months. Reheat gently with a splash of broth to restore creaminess.
