Ingredients
  

  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 box (6 oz) stuffing mix (such as Stove Top, herb or chicken flavor)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup chicken broth
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)

Method
 

Prep Your Crockpot
  1. Spray the inside of your slow cooker generously with cooking spray or rub it with a little butter. Place your chicken breasts in a single layer across the bottom of the pot. If they're thicker, you can gently press them down — no need to cut them yet.
Make the Creamy Base
  1. In a mixing bowl, stir together the condensed cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, black pepper, and thyme. Whisk until smooth and well combined. Pour this mixture evenly over the chicken, making sure the breasts are fully coated.
Add the Stuffing Layer
  1. Open your stuffing mix and sprinkle it straight from the box directly over the creamy chicken layer. Spread it as evenly as you can. Do not stir it in — keeping the stuffing on top allows it to steam and absorb the liquid from below while staying slightly textured rather than turning mushy.
Slow Cook to Perfection
  1. Place the lid on your crockpot and cook on LOW for 4 hours or HIGH for 2.5 hours. Resist the urge to lift the lid during cooking. You'll know it's ready when the chicken is fork-tender and pulls apart easily and the stuffing has puffed up slightly.
  2. Use a fork to gently shred the chicken right in the pot and fold everything together before serving.

  1. Scoop generous portions into bowls or onto plates, making sure each serving gets a mix of that creamy shredded chicken and fluffy stuffing.
