Crockpot Chicken Tacos

Ingredients
  

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning (or 2 tablespoons homemade blend)
  • 1 cup salsa (mild or medium)
  • 1/2 cup chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lime juice of lime
  • corn or flour tortillas for serving
  • toppings: shredded cheese, lettuce, tomatoes, sour cream, avocado

Method
 

  1. Place chicken breasts in your slow cooker and sprinkle taco seasoning evenly over both sides.
  2. Pour salsa, chicken broth, and diced green chiles over the seasoned chicken.
  3. Scatter diced onion and minced garlic around the chicken.
  4. Cover and cook on low for 6 hours or high for 4 hours, until chicken easily shreds with a fork.
  5. Remove chicken from the crockpot and shred using two forks on a cutting board.
  6. Return the shredded meat to the slow cooker and stir in fresh lime juice.
  7. Let everything simmer together for an additional 15 minutes on low to allow chicken to absorb flavors.

Notes

Start in the morning before work for dinner ready when you get home. Perfect for meal prep Sunday. Don't skip the lime juice as it transforms the dish. Avoid overcooking on high heat to prevent dry chicken. Don't drain cooking liquid. Refrigerate leftovers up to 4 days or freeze up to 3 months. Can use frozen chicken but add extra hour cooking time.
