- Preheat your oven to 375°F and lightly grease a 9x13 inch baking dish. Crush half the bag of Doritos into bite-sized pieces – not powder, but chunky enough to add texture. Save the remaining chips for the top layer.
- In a large skillet over medium-high heat, brown the ground beef until no pink remains, about 6-7 minutes. Drain any excess fat, then stir in the taco seasoning with 2/3 cup water. Let it simmer for 2 minutes until the liquid reduces and the meat smells fragrant with spices.
- Add black beans, corn, and diced tomatoes with chilies to the skillet. Stir everything together and cook for another 3 minutes. Remove from heat and fold in the sour cream until everything is creamy and well-combined.
- Spread the crushed Doritos evenly across the bottom of your prepared baking dish. Spoon the beef mixture over the chips, then sprinkle with half the cheese. Top with remaining Doritos and cheese.
- Bake for 15-18 minutes until the cheese melts completely and the edges bubble gently. The top should be golden but not burned. Let it rest for 5 minutes before serving.
Notes
Store leftovers in refrigerator for up to 4 days. Can be made ahead and refrigerated for 24 hours before baking. Freezes well for up to 3 months. Don't crush Doritos too finely - you want texture. Let rest 5 minutes after baking for clean slices. Always drain ground beef well to prevent sogginess.
