Ingredients
  

  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 4 large tomatoes, diced and drained
  • 1/3 cup fresh basil, chopped
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Toasted baguette slices or tortilla chips for serving

Method
 

  1. In a large mixing bowl, combine softened cream cheese, mayonnaise, and Parmesan cheese. Beat with an electric mixer until smooth and fluffy, about 2 minutes. The mixture should be completely lump-free and easy to spread.
  2. Fold in minced garlic, salt, and pepper. Mix gently but thoroughly.
  3. Dice tomatoes into small, uniform pieces and place them on paper towels. Sprinkle lightly with salt and let them drain for 10 minutes. Pat the tomatoes dry before adding them to the creamy base.
  4. Gently fold the drained tomatoes, fresh basil, and balsamic vinegar into the cream cheese mixture. Don't overmix - you want distinct pockets of fresh ingredients throughout. Taste and adjust seasoning as needed.
  5. Cover and refrigerate for at least 30 minutes before serving. Serve with toasted baguette slices, pita chips, or fresh vegetables for dipping.

Notes

Make sure to use room temperature cream cheese for smooth texture. Drain tomatoes properly to prevent watery dip. Flavors improve overnight. Store covered in refrigerator for up to 3 days. Do not freeze as cream cheese base will separate when thawed. Add fresh basil right before serving when making ahead.
