This easy taco casserole brings all the beloved flavors of taco night into one comforting dish with layers of seasoned beef, melty cheese, and crispy tortilla chips.

  • 1 pound ground beef (or ground turkey for a lighter option)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup frozen corn
  • 2 cups shredded Mexican cheese blend
  • 3 cups crushed tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup water

Method

  1. Preheat your oven to 350°F and lightly grease a 9x13 inch baking dish.
  2. Heat a large skillet over medium-high heat and add the ground beef. Cook for 6-8 minutes, breaking it apart with a wooden spoon until it's nicely browned and no pink remains.
  3. Drain any excess fat from the beef, then stir in the taco seasoning, water, black beans, diced tomatoes, and corn. Let this mixture simmer for 3-4 minutes until the flavors meld together.
  4. Spread half of the crushed tortilla chips in your prepared baking dish. Spoon the beef mixture evenly over the chips, then dollop the sour cream on top. Sprinkle with the shredded cheese and finish with the remaining tortilla chips.
  5. Bake for 15-20 minutes until the cheese is melted and bubbly around the edges and the top is golden.

Notes

Brown ground beef ahead of time and store in refrigerator for up to 3 days to cut prep time to 15 minutes. Don't skip draining diced tomatoes to avoid watery casserole. Let rest for 5 minutes after baking for best serving consistency. Can be assembled up to 24 hours ahead - add 5-10 minutes to baking time if cooking from cold. Store leftovers in refrigerator for up to 4 days or freeze for up to 3 months.
