Ingredients
  

Banana Bites
  • 3 ripe bananas, peeled and sliced into ½-inch rounds
  • 1 cup semi-sweet chocolate chips or dark chocolate chips
  • 1 tablespoon coconut oil
  • 1 pinch flaky sea salt
Optional Toppings
  • ¼ cup crushed graham crackers
  • 2 tablespoons sprinkles or mini chocolate chips
  • 2 tablespoons chopped peanuts or almonds

Method
 

Slice and Pre-Freeze the Bananas
  1. Line a baking sheet with parchment paper.
  2. Slice bananas into rounds about half an inch thick — not too thin or they'll break apart during dipping, not too thick or they'll take too long to freeze through.
  3. Lay each slice flat on the parchment so they aren't touching.
  4. Slide the tray into the freezer for at least 1 to 2 hours, or until the slices are completely firm.
Melt the Chocolate
  1. Combine chocolate chips and coconut oil in a microwave-safe bowl.
  2. Microwave in 30-second bursts, stirring between each round, until the mixture is completely smooth and glossy — about 90 seconds total.
  3. Let the melted chocolate cool for about 2 minutes before dipping so it doesn't cause the chocolate to seize up on the frozen fruit.
Dip and Top
  1. Set up a topping station with your chosen toppings ready before you begin dipping.
  2. Working quickly, use a fork or toothpick to dip each frozen banana slice into the chocolate, letting the excess drip off for a second before placing it back on the parchment.
  3. Immediately sprinkle your chosen toppings before the chocolate sets — it hardens within seconds once it touches the frozen banana.
Freeze Until Set
  1. Once all banana bites are topped and arranged on the parchment, slide the whole tray back into the freezer for at least 30 minutes, or until the chocolate is fully hardened.
  2. Once frozen solid, transfer them to a zip-top bag or airtight container with parchment between layers for longer storage.

Notes

Always pre-freeze banana slices before dipping to prevent them from falling apart in the warm chocolate. Use ripe bananas with a few brown spots for the sweetest, creamiest result. Have all toppings ready before dipping as chocolate sets within seconds on frozen fruit. Store in an airtight container or zip-top freezer bag with parchment between layers for up to 3 months. Let sit at room temperature for 2–3 minutes for a slightly softer bite. If chocolate coating is too thick, add more coconut oil half a teaspoon at a time. Substitute milk or white chocolate for a milder flavor; use sunflower seed butter drizzle for nut-free households.
