Ingredients
  

Pastry
  • 2 ½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cubed (2 sticks)
  • 6-8 tablespoons ice water
Filling
  • ¾ cup fruit jam or preserves (strawberry, raspberry, or grape)
  • 1 tablespoon cornstarch
Icing and Topping
  • 1 ½ cups powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract
  • rainbow sprinkles, for topping
  • 1 egg, beaten (for egg wash)

Method
 

Prepare the Pastry Dough
  1. Combine flour, sugar, and salt in a large mixing bowl.
  2. Add the cold butter cubes and use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter still visible.
  3. Gradually add ice water one tablespoon at a time, mixing gently until the dough just comes together.
  4. Divide the dough in half, shape each portion into a flat disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Mix the Filling
  1. While the dough chills, stir together the jam and cornstarch in a small bowl until well combined. The cornstarch prevents the filling from becoming too runny during baking.
Roll Out the Dough
  1. Preheat your oven to 375°F and line a large baking sheet with parchment paper.
  2. On a lightly floured surface, roll one disk of dough into a large rectangle, about 10x14 inches and roughly ¼ inch thick. Transfer carefully to the prepared baking sheet.
  3. Roll out the second disk to the same size and set aside.
Assemble the Giant Pop Tart
  1. Spread the jam mixture over the dough rectangle on the baking sheet, leaving a 1-inch border around all edges.
  2. Brush the exposed border with beaten egg to act as glue to seal the layers together.
  3. Carefully place the second rectangle of dough on top and press the edges firmly with a fork to seal, creating a classic crimped pattern around the perimeter.
  4. Poke several holes across the top with a fork to allow steam to escape, then brush the entire surface with more egg wash.
Bake Until Golden
  1. Bake for 23-27 minutes until the pastry turns deep golden brown and the edges look crisp.
  2. Let it cool on the baking sheet for 10 minutes before adding the icing.
Add the Icing and Sprinkles
  1. Whisk together powdered sugar, milk, and vanilla until smooth and pourable but not too thin.
  2. Drizzle or spread the icing generously over the cooled pop tart, then immediately add sprinkles before the icing sets.
  3. Slice into squares and serve warm.

Notes

Chill dough for at least 30 minutes before rolling. You can make the dough the night before and refrigerate overnight. Use cold butter for best flaky layers. Do not overfill with jam (stick to ¾ cup). Always use the egg wash border to seal edges. Let the pop tart cool at least 10 minutes before icing. Store at room temperature in an airtight container for up to 2 days, refrigerate for up to 5 days, or freeze individual portions for up to 3 months. Reheat in a 350°F oven for 8-10 minutes or toast until warmed through. Substitution tips: use cold shortening instead of butter for extra flakiness; use Nutella or cookie butter as filling; use almond or oat milk in icing for a dairy-free version; or use store-bought refrigerated pie dough to save time.
