Ingredients

  • 2 pounds flank steak
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Method

  1. Whisk together olive oil, soy sauce, lime juice, minced garlic, cumin, chili powder, pepper, and salt in a shallow dish.
  2. Place the flank steak in the marinade, turning to coat both sides completely. Marinate for at least 10 minutes.
  3. Heat your grill to medium-high heat, around 400-450°F. Clean the grates thoroughly and oil them lightly.
  4. Remove the steak from marinade and grill for 4-5 minutes per side for medium-rare, or until it reaches 130°F internal temperature.
  5. Let the grilled flank steak rest for 5 minutes before slicing. Slice thinly against the grain at a 45-degree angle.

Notes

Marinate the steak in the morning for even more flavor. Always slice against the grain at a 45-degree angle for maximum tenderness. Don't skip the 5-minute resting period. Store leftovers in refrigerator for up to 3 days or freeze for 3 months. Can be cooked indoors using a cast-iron skillet or grill pan.
