Method
- Season your diced chicken with salt, pepper, and a squeeze of lime juice. If using leftover chicken, let it come to room temperature for better texture.
- Slice avocados just before assembling and drizzle with lime juice to prevent browning.
- Heat tortillas in a dry skillet for 30 seconds each side or wrap in damp paper towels and microwave for 20 seconds.
- Spread ranch dressing down the center of each tortilla, leaving borders for folding. Layer greens first, then add chicken, avocado slices, bell pepper, onion, and cheese.
- Fold the bottom edge up over the filling, tuck in the sides tightly, then roll forward keeping tension. Slice diagonally to serve.
Notes
Use leftover rotisserie chicken for convenience. Prep ingredients Sunday evening and store separately for easy assembly. Warm tortillas before assembling to prevent cracking. Don't overfill wraps or they'll tear. Refrigerate assembled wraps wrapped in foil for up to 24 hours, but for best results store components separately. These don't freeze well due to avocado content.
