Sauté the Aromatics
- Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Once the oil shimmers, add the diced onion and bell pepper. Cook for 4 to 5 minutes, stirring occasionally, until the onion turns soft and translucent.
- Add the minced garlic and stir for another 30 seconds until fragrant.
Brown the Turkey
- Add the ground turkey to the pot. Break it apart with a wooden spoon and cook over medium-high heat for 6 to 8 minutes until no pink remains in the meat, getting a little golden color on the turkey for added richness.
- Drain any excess liquid if needed before moving forward.
Bloom the Spices
- Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper directly onto the cooked turkey. Stir everything together and let the spices cook for about 60 seconds to bloom them and bring out their bold, fragrant flavors.
Add the Tomatoes and Beans
- Pour in the crushed tomatoes, diced tomatoes, and chicken broth. Stir to combine everything thoroughly.
- Add both cans of rinsed beans and give the pot another good stir.
Simmer Low and Slow
- Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot partially and let it simmer for 20 to 25 minutes, stirring every 5 minutes or so, until thickened and flavors have melded together.
- Taste and adjust seasoning before serving, adding a pinch more salt or extra chili powder as needed.
