  • 1 large Italian sub roll (or French bread)
  • 4 oz sliced salami
  • 4 oz sliced ham
  • 4 oz sliced turkey
  • 4 slices provolone cheese
  • 2 slices mozzarella cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 cup sliced red onion
  • 1/2 cup shredded lettuce
  • 2 tomatoes, sliced
  • 1/4 cup sliced banana peppers
  • Salt and pepper to taste

Method
 

  1. Whisk together olive oil, red wine vinegar, oregano, and garlic powder in a small bowl. This Italian-style dressing should smell fragrant and emulsify slightly when whisked vigorously.
  2. Slice the Italian roll lengthwise, leaving one side attached like a hinge. Gently hollow out some of the bread from both sides to create more room for fillings and ensure the perfect meat-to-bread ratio.
  3. Start with the salami, folding each slice slightly to create height and texture. Layer the ham next, then the turkey. Create gentle folds and waves in the meat for authentic deli appearance and better flavor distribution.
  4. Place provolone slices over the meat, followed by mozzarella. The cheese acts as a barrier between wet ingredients and bread, preventing sogginess.
  5. Arrange tomato slices on top of the cheese, then add red onion, lettuce, and banana peppers. Season the tomatoes with a pinch of salt and pepper.
  6. Drizzle the prepared dressing evenly over the vegetables. Close the sandwich and wrap tightly in plastic wrap. Press gently for 2-3 minutes with a heavy skillet to help flavors meld together and make slicing easier.

Notes

Make the dressing ahead on Sunday meal prep day and store it in the fridge for quick assembly throughout the week. Store assembled sandwiches wrapped in plastic in the refrigerator for up to 2 days - the flavors actually improve overnight. Bring to room temperature for 15 minutes before serving for best results. Don't skip hollowing out the bread to prevent an overly thick sandwich. Always place cheese directly over the meat to create a moisture barrier and prevent sogginess.
