Ingredients
  

  • 2 oz bourbon whiskey
  • 1 tablespoon honey (or maple syrup for a deeper flavor)
  • 8-10 fresh mint leaves, plus extra for garnish
  • 2 tablespoons water
  • crushed ice
  • 1 mint sprig for garnish

Method
 

  1. In a cocktail shaker or sturdy glass, combine the honey with 2 tablespoons of warm water. Stir until the honey completely dissolves, creating a smooth syrup.
  2. Add the mint leaves to your shaker with the honey syrup. Gently muddle the leaves using a muddler or the back of a spoon. Press just enough to release the oils and fragrance. Avoid over-muddling, which can make the drink bitter.
  3. Pour in the bourbon and give everything a gentle stir.
  4. Fill a traditional julep cup or rocks glass with crushed ice. Pour the mixture over the ice, allowing the cold to immediately chill the drink. Top with additional crushed ice if needed.
  5. Slap a fresh mint sprig between your palms to release its oils, then tuck it into the ice as garnish.

Notes

Don't over-muddle the mint leaves, as this releases bitter compounds instead of just the fragrant oils. Avoid using hot water to dissolve honey—warm water works better and won't dilute your drink. The honey-mint mixture can be prepared up to 2 hours ahead and stored in the refrigerator. Add bourbon and ice just before serving for the best flavor and proper dilution.
