Honey Soy Pork Chops

Ingredients
  

  • 4 bone-in pork chops (about 1-inch thick)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar (or white vinegar)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon vegetable oil
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds
  • Salt and pepper to taste

Method
 

  1. Whisk together soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a small bowl until the honey dissolves completely.
  2. Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.
  3. Heat vegetable oil in a large skillet over medium-high heat. When the oil shimmers, carefully place the pork chops in the skillet and sear for 3-4 minutes per side until golden brown.
  4. Pour the honey soy glaze over the pork chops. Reduce heat to medium-low and let the chops simmer in the glaze for 5-6 minutes, spooning the sauce over them occasionally. Cook until internal temperature reaches 145°F.
  5. Remove from heat and let the pork chops rest for 3 minutes. Garnish with sliced green onions and sesame seeds before serving.

Notes

The marinade can be prepared earlier in the day and stored in the refrigerator. Don't skip patting the pork chops dry for proper browning. Avoid overcrowding the pan and let chops develop a golden crust before flipping. Internal temperature should reach 145°F. Let rest for 3 minutes after cooking. Refrigerate leftovers for up to 3 days and reheat gently in a covered skillet with a splash of water.
