Preparation Steps
- Preheat your oven to 375°F and grease a 9-inch pie dish. In a large skillet over medium-high heat, brown the ground beef for 5-6 minutes, breaking it apart with a wooden spoon. Drain any excess fat.
- Add taco seasoning and water to the beef. Let it simmer for 3-4 minutes until the liquid reduces and the meat is well-coated. Stir in black beans and half the salsa, cooking for another 2 minutes.
- Spread half the crushed tortilla chips in your prepared pie dish. Layer the seasoned meat mixture on top, then sprinkle with half the cheese. Add remaining chips and top with remaining cheese.
- Bake for 15-20 minutes until the cheese is melted and bubbly around the edges. Let it cool for 5 minutes before serving to allow the layers to set.
Notes
Don't skip draining the ground beef to avoid sogginess. Avoid over-crushing tortilla chips for texture. Don't overbake or cheese becomes tough. Let cool for 5 minutes before serving to prevent messy collapse. Can be assembled 24 hours ahead and refrigerated before baking. Refrigerate leftovers up to 3 days or freeze up to 2 months. Reheat in 350°F oven for 10 minutes.
