Piña Colada Agua Fresca

Ingredients

  • 4 cups fresh pineapple chunks (or frozen, thawed)
  • 1 cup coconut milk (full-fat or light)
  • 3 cups cold water
  • 1/4 cup honey or agave nectar (adjust to taste)
  • 1 lime, juiced
  • ice cubes for serving

Method
 

Prepare Your Ingredients
  1. Gather your pineapple chunks, coconut milk, water, honey, and lime. If you're using fresh pineapple, make sure it's ripe—you'll know it's ready when it smells sweet at the base and the leaves pull out easily.
Blend the Base
  1. Add the pineapple chunks to your blender along with the coconut milk and 2 cups of the cold water. Blend on high speed for about 45 seconds until the mixture is completely smooth and frothy with zero chunks remaining.
Sweeten and Balance
  1. Pour in the honey and lime juice, then blend again for another 15 seconds. Taste and adjust sweetness as needed by adding another tablespoon of honey if desired.
Strain for Smoothness
  1. Pour the blended mixture through a fine-mesh strainer into a large pitcher. Use the back of a spoon to press down and extract as much liquid as possible to achieve a silky smooth agua fresca texture without any pulp.
Dilute and Serve
  1. Add the remaining 1 cup of cold water to the pitcher and stir well. Taste once more and adjust water if you prefer it even lighter.
  2. Fill glasses with ice cubes, pour the Piña Colada Agua Fresca over the top, and garnish with pineapple wedges or a sprinkle of coconut flakes if desired. Serve immediately.

Notes

Store leftover Piña Colada Agua Fresca in an airtight pitcher or jar in the refrigerator for up to 3 days. Give it a good stir before serving as natural separation may occur. This drink doesn't freeze well as a finished product, but you can freeze extra pineapple chunks for your next batch. Use unsweetened coconut milk to avoid making the drink too sugary. Don't skip the straining step or you'll end up with a smoothie rather than a true agua fresca. If fresh pineapple isn't available, canned pineapple chunks work well—just drain them and reduce the sweetener. For an adult version, add 1-2 ounces of white rum per glass.
