Method
- Preheat your oven to 350°F and line a baking sheet with parchment paper. Arrange 24 crackers on the sheet, leaving space between each one.
- Place one unwrapped Rolo candy in the center of each cracker. Press gently to ensure they stay in place during baking.
- Slide the baking sheet into the oven for 3-4 minutes. Watch carefully - you want the Rolos to soften and become glossy, but not completely melt into puddles.
- Remove from oven and immediately press the remaining 24 crackers on top of each softened Rolo, creating little sandwiches. Press firmly but gently.
- While still warm, sprinkle with mini chocolate chips or sea salt flakes if desired. Let cool for 5 minutes before serving.
Notes
Don't overbake - melted Rolos become messy and lose their shape. Work quickly while the Rolos are warm for best results. Store in an airtight container at room temperature for up to one week or freeze for up to one month. Can also be made in microwave by heating for 15-20 seconds until softened.
