Ingredients
  

For the Salad
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed (or fresh)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • ½ red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • cup fresh cilantro, chopped
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey (or maple syrup)
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • salt and pepper to taste

Method
 

Prepare Your Vegetables
  1. Drain and rinse the chickpeas and black beans thoroughly under cold water to remove excess sodium and any canned taste.
  2. Dice the bell peppers into bite-sized, uniform pieces so every forkful has a balanced mix.
  3. Halve the cherry tomatoes and finely dice the red onion. The smaller you dice the onion, the more evenly its flavor will distribute throughout the salad.
Mix the Dressing
  1. In a small bowl or jar with a lid, combine the olive oil, fresh lime juice, apple cider vinegar, and honey.
  2. Add the cumin, chili powder, and garlic powder.
  3. Whisk vigorously or shake the jar until the dressing is completely emulsified and slightly thickened.
  4. Taste and adjust seasoning with salt and pepper. The dressing should be bright and punchy.
Combine Everything
  1. In a large mixing bowl, add the chickpeas, black beans, corn, diced bell peppers, red onion, and cherry tomatoes.
  2. Pour the dressing over the top and use a large spoon or spatula to gently toss everything together until each ingredient is coated in the dressing. Be thorough but gentle to avoid mashing the beans.
Add Fresh Herbs and Rest
  1. Fold in the chopped cilantro just before serving.
  2. If time allows, let the salad rest in the refrigerator for at least 30 minutes to allow the flavors to meld together and the beans and vegetables to absorb the dressing.

Store in an airtight container in the refrigerator for up to 4 days — flavors improve overnight. This salad does not freeze well. Substitution tips: use fresh parsley instead of cilantro, cucumber instead of bell peppers for a milder crunch, and add diced avocado just before serving for a creamier texture. When using dried beans, substitute 1½ cups cooked chickpeas and 1½ cups cooked black beans. Start with three-quarters of the dressing and add more as needed. Rinse and drain beans thoroughly to avoid a watery salad.
