Ingredients
  

  • 1 wheel brie cheese (8 oz), top rind removed
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons honey
  • 1 tablespoon balsamic glaze
  • 2 tablespoons chopped fresh thyme
  • 1/4 cup sliced almonds
  • crackers or sliced baguette for serving

Method
 

  1. Preheat your oven to 350°F. Place the brie in a small baking dish or cast-iron skillet. Using a sharp knife, score the top in a crosshatch pattern about 1/4 inch deep.
  2. In a medium bowl, gently combine sliced strawberries with honey and half the fresh thyme. Let this mixture sit for 5 minutes.
  3. Spoon the strawberry mixture over the scored brie, allowing some pieces to fall into the cuts. Sprinkle with sliced almonds and remaining thyme.
  4. Bake for 12-15 minutes until the cheese feels soft when gently pressed and the edges start to bubble slightly.
  5. Remove from oven and immediately drizzle with balsamic glaze. Let cool for 2-3 minutes before serving.

Notes

Don't remove all the rind - leave the bottom and sides intact to prevent melted cheese from spreading everywhere. Avoid overbaking, which causes the cheese to become rubbery. Let cool for 2-3 minutes before serving to prevent burns while keeping cheese gooey. Refrigerate leftovers for up to 2 days and reheat in 300°F oven for 8-10 minutes. Can assemble up to 4 hours in advance and refrigerate - add 5 extra minutes to baking time if starting from cold.
