Strawberry Jello Dessert

Ingredients
  

For the Gelatin Layer
  • 2 packages strawberry gelatin powder (3 oz each)
  • 2 cups boiling water
  • cups cold water
  • 1 cup fresh strawberries, hulled and sliced
For the Cream Layer
  • 1 package cream cheese, softened (8 oz)
  • ¾ cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

Method
 

  1. Dissolve both packages of strawberry gelatin in the boiling water, stirring until completely smooth and crystal clear. Add the cold water and stir well. Refrigerate for about 30 minutes until it reaches the consistency of unbeaten egg whites.
  2. Gently fold the sliced strawberries into the partially set gelatin. Pour half of this mixture into your serving dish and refrigerate until firm to the touch (about 2 hours).
  3. Beat the softened cream cheese and sugar until completely smooth and fluffy with no lumps. In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Once the first gelatin layer is firm, carefully spread the cream mixture over the top. Use the back of a spoon to create gentle swirls if desired.
  5. Pour the remaining strawberry gelatin mixture slowly over the cream layer to avoid breaking through. Refrigerate for at least 2 more hours until completely set and the top barely jiggles when gently shaken.
  6. Serve chilled, garnished with additional fresh strawberry slices and whipped cream if desired.

Notes

This dessert improves after overnight chilling and is perfect for preparing the day before. Store covered in refrigerator for up to 5 days. Don't use fresh pineapple, kiwi, or papaya as they prevent gelatin from setting. Each layer must be firm before adding the next to ensure distinct separation. Frozen strawberries can be substituted if thawed and drained.
