Method
Season and Cook the Chicken

- Stir once, let them char another minute, then remove from heat.
Make the Elote Sauce
- In a small bowl, whisk together the mayonnaise, sour cream, lime juice, and chili powder until smooth and creamy.
- Taste and adjust the lime or chili powder to your preference.
Assemble the Bowls
- Scoop a generous base of warm rice into each bowl.
- Top with sliced chicken and a big spoonful of charred corn.
- Drizzle the elote sauce liberally over everything.
- Finish with crumbled cotija, fresh cilantro, and a squeeze of lime before serving.
