Ingredients
  

French Toast
  • 8 slices brioche or Texas toast bread (thick slices)
  • 4 oz cream cheese, softened
  • ¼ cup strawberry jam or preserves
  • 2 large eggs
  • cup whole milk
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 tbsp granulated sugar
  • 2 tbsp unsalted butter (for the pan)

Method
 

Prepare the Cream Cheese Filling
  1. In a small bowl, stir together the softened cream cheese and strawberry jam until smooth and well combined. Don't rush this step — a creamy, lump-free filling means every bite is consistent.
Assemble the Stuffed Sandwiches
  1. Spread a generous layer of the cream cheese mixture onto one side of four bread slices. Top each with another slice, pressing gently around the edges to seal. The seal doesn't need to be perfect — just firm enough that the filling stays put when it hits the pan.
Make the Egg Custard
  1. In a wide, shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until fully blended. The mixture should look pale and slightly frothy. Whisk it well so the cinnamon doesn't clump on the surface.
Dip and Soak
  1. Dip each stuffed sandwich into the egg custard, letting it soak for about 20–30 seconds per side. You want the bread to absorb the mixture without becoming soggy and falling apart. Press lightly with your fingers — you'll feel the bread soften just slightly.
Cook Until Golden
  1. Melt one tablespoon of butter in a large non-stick skillet over medium heat. Once the butter starts to foam and smell nutty, add two stuffed sandwiches at a time.
  2. Cook for 3–4 minutes per side until deeply golden brown and slightly crisp on the outside. If the sizzle is too loud and aggressive, lower the heat slightly. You want steady color, not a burnt crust.
  3. Repeat with the remaining butter and sandwiches.
Serve and Finish
  1. Transfer to plates immediately, dust with powdered sugar, and pile on fresh berries. Serve while warm so the cream cheese filling is still soft and slightly melted in the center.

You can also assemble the sandwiches the night before, cover tightly, and refrigerate — dip in custard and cook fresh in the morning for best results. Common mistakes to avoid: over-soaking the bread (stick to 20–30 seconds per side), cooking on too high heat (use medium heat), overfilling the sandwich (a generous tablespoon per slice is plenty), and using cold cream cheese (let it sit at room temperature for at least 15 minutes before using). Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze individually on a baking sheet, then transfer to a freezer bag for up to 1 month. Reheat in a toaster oven or skillet over medium-low heat to restore the crispy exterior.
