Tomato Sandwiches

A simple, fresh, and deeply satisfying classic tomato sandwich made with ripe tomatoes, seasoned mayo, and toasted bread — ready in just 15 minutes and perfect for lunch or a quick snack.

Ingredients
  

  • 4 slices thick-cut white or sourdough bread
  • 2 large ripe tomatoes, sliced ¼ inch thick
  • 3 tablespoons mayonnaise
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt and freshly cracked black pepper
  • 4-5 fresh basil leaves (optional but recommended)
  • 1 tablespoon butter, softened (for toasting)

Method
 

  1. Slice the tomatoes into even ¼-inch slices and lay them out on a paper towel for about five minutes to draw out extra moisture so the bread doesn't turn soggy.
  2. Lightly season each tomato slice with salt and freshly cracked black pepper. Let them rest another minute or two until tiny beads of juice form on the surface.
  3. In a small bowl, stir together the mayonnaise, garlic powder, and onion powder until fully combined.
  4. Butter one side of each bread slice and place them butter-side down in a skillet over medium heat. Toast for about two minutes until golden and fragrant. Skip this step if you prefer soft bread.
  5. Spread a generous layer of the seasoned mayo on the untoasted side of each bread slice. Layer the tomato slices evenly, slightly overlapping them. Tuck in a few fresh basil leaves if using. Press the top slice gently, slice diagonally, and serve immediately.

Notes

Tomato sandwiches are best enjoyed fresh. Assemble right before eating as even 10 minutes of sitting can make the bread go limp. Store leftover components separately — sliced tomatoes covered in the fridge for up to two days and mayo spread in an airtight container. Re-toast the bread fresh when ready to reassemble. For meal prep, slice tomatoes and mix the seasoned mayo the night before and store them separately. Spread a thin layer of butter on the bread before adding mayo to create a moisture barrier if packing for later. Not ideal for freezing once assembled.
